Sukto - Sholoana

DESCRIPTION:Shukto   -   Shukto is shallow fried seasonal vegetables (in mustard oil) and then cooked with flavoured spices in a white gravy(thanks to a mellow white mustard paste). This is a sweetish bitter tasting dish, due to the use of bitter gourd. Various other vegetables like Brinjal, sweet potato, potato, drumsticks, raw papaya are used to prepare this unique dish. Radhuni (Trachyspermum roxburghianum) seeds are used in hot oil for the tadka or tempering which gives Shukto, its unique flavour. Milk is also used in some variants. The dish is topped off with crunchy pieces of big, white bori (dried beuli/ urad dal lentil dumplings).Shukto is served with rice at the starting of the meal as it is believed that eating something bitter initially has medicinal value. This item is made in Bengali household during the summer months as it helps to beat the heat and keeps the stomach cool. The flagbearer of simple and light Bengali cooking!
